Yummy Nuts & Raisin Cupcakes

Fluffy and fragrant cupcakes filled with juicy raisins and topped with a crunchy nutty texture.

    Preheat the oven to 175°C.

    In a mixing bowl, whisk together the eggs and vanilla extract for 8 minutes until fluffy.

    Add powdered sugar and mix for 2 minutes, then add oil and yoghurt and mix together for 2 more minutes.

    Gradually add flour and baking powder to the batter, and mix until creamy and fluffy.

    Line a 12-cup cupcake tin with paper liners, fill each one with the batter, and sprinkle crushed nuts on top. Add raisins on top of the nuts.

    Bake in the preheated oven at 175°C for about 20-25 minutes or until the cupcakes start to crack.

    Allow the cupcakes to cool completely at room temperature.
