Delicious Semolina Cupcakes

These cupcakes are favorites with my family. We love them served warm for afternoon tea.

    Preheat oven 180F, beat the egg together with vanilla in bowl, add sugar and whisk until creamy

    Add oil, orange juice and mix until smooth.

    Gradually add semolina to the egg mixture, followed by baking powder and whisk well.

    Grease cupcake cases with butter. Divide the mixture evenly among the cases, add jam to top it.

    Place the cases in a preheated oven of 180°C and bake for 20-25 minutes.

    Set aside to cool then serve and enjoy.
