Winter Lentil Soup

Hearty lentil soup, chock full of veggies, and very yummy. Serve with warm cornbread

    First clean and rinse the lentils set aside

    Shop carrots, onions , tomatoes

    Place a pot on the cooker and set the heat to high. Add 1 liter of water. Add the lentils, chopped onions, chopped carrots, cumin, salt, garlic cloves and the diced tomatoes. Bring to a boil; set the heat to medium, cover and cook for 15 minutes.

    Add the turmeric and stir. Keep the heat on medium, cover and cook for 5 minutes.

    Turn off the heat and blend. Add olive oil and stir. Set the heat to high, cover and cook for 2 minutes.

    Pour inside a soup cup and garnish with green onions.
