Turkish Bulgur Salad

Super healthy, very delicious and can be eaten alone or with a side of protein

Ingredients for 2 portions

    Scoop the bulgur inside a bowl add 1 cup of hot water stir. Cover for 30 minutes until water is absorbed.

    Place a pot on the cooker and set the heat to medium low; add 2 tablespoons of oil. Chop the onion and pack inside the pot fry for 1 minutes or until soften Add the chicken stock and salt, 1 cup of water and the soaked bulgur; stir and bring to a boil. Set the heat to low; cover and cook for 20 minutes.Uncover the pot; mix, cover and cook for 5 minutes.

    Wash and chop the cucumbers then set aside. Slice the cherry tomatoes and pack inside the chopped cucumbers. Chop the parsley and scoop inside as well; mix thoroughly.

    Scoop in the cooked bulgur and mix.
