Pealy Pot Barley Salad

This superfood grain is crunchy, colorful, and nutritious and jam-packed with fresh vegetables and a zesty dressing!

    Wash all vegetables then chop tje tomatoes, cucumber, peppers, green onions, parsley and set aside

    Place a pot on the cooker. Pour in 4 cups of water then add barley. Cover and bring to a boil then set the heat to low and cook for 15 minutes.

    Rinse with cold water and transfer into a bowl.

    Add the chopped red peppers, green onions, parsley, tomatoes, cucumbers, black pepper, salt, olive oil and vinegar; mix thoroughly.
