Smooth Barley Pudding
Nutritious and delicious barley pudding with a rich, creamy texture and fruity adornments.

Rinse and drain barley, and soak for 3 hours or until soft.

Cook on medium heat, bring to a boil, and then lower the heat to low for about 25 minutes. Stir occasionally and cook for 5 minutes more or until the water starts to evaporate.

Combine milk, cornstarch, and sugar in a separate bowl to make cornstarch mixture.

Add the mixture to the barley and cook for about 10-15 minutes, stirring constantly until pudding is formed.

In a separate bowl, combine milk and whipping cream powder to make whipping cream. Mix well and add to the barley pudding. Cook for 5 minutes and turn off the heat.

Serve immediately and decorate with dry apricot, almonds and raisins.
