Qamar-el-din Apricot Pudding
This sweet and creamy Dried Apricot Pudding is a perfect dessert for any occasion, topped with crunchy nuts

In a stockpot, boil the apricot paste and water on medium heat, stirring occasionally until melted. Then, turn off the heat and set aside.

In a medium bowl, combine cornstarch and apricot juice, then set aside.

Place the boiled apricot mixture back on the heat, add sugarand cornstarch mix, and stir until the sugar dissolves.

Reduce heat to medium-low and cook, stirring constantly for about 8 minutes until the liquid evaporates, and pudding forms.

Divide the pudding into glasses and set aside.

For the cream, add cornstarch and 2 tbsp of milk in a small bowl, stir to combine and set aside.

Add the remaining 1 cup of milk, ΒΌ cup sugar, and the cornstarch mixture into a small saucepan. Stir to combine and bring to a boil over medium-low heat.

Reduce heat, cook for 4 minutes more, stirring continuously until combined.

Top the pudding in the glasses with the milk mixture. Set aside to cool.
