Middle Eastern Date-Stuffed Katayef

Experience the delight of Katayef, a traditional Middle Eastern dessert often served during Ramadan. These tender, yeast-leavened pancakes are folded around a sweet, rich filling of dates and nuts. Fried until golden and crispy, they are then dipped in aromatic syrup for a decadent finish. A perfect treat to enjoy with coffee or tea.

    In a blender, combine water, yeast, baking powder, sugar, semolina, milk powder, flour, and salt. Blend for 3 minutes until smooth.

    Pour the batter into a bowl, cover with plastic wrap, and let it rest for 10-15 minutes.

    Heat a non-stick pan on low heat. Pour small ladlefuls of batter to form pancakes and cook on one side only until bubbles form and the surface dries.

    Prepare the filling by microwaving the dates for 1 minute, then adding butter and mixing. Stir in the crushed nuts until combined.

    Take small portions of the date mixture and roll them into small logs.

    Place a filling roll in the center of the uncooked side of each pancake. Fold and pinch the edges firmly to seal into a half-moon shape.

    Heat oil in a pan over medium heat and fry the stuffed Katayef until golden brown on both sides.

    Remove the Katayef from the oil and immediately dip them into the sugar syrup.

    Arrange on a serving plate and garnish with extra crushed nuts and shredded coconut before serving.
