Wash and chop the parsley, cucumber, peppers, tomato and onion then set aside.

Place a pot on the cooker and pour in enough water. Set the heat to medium; cover and bring to a boil. Add the pearl couscous, oil and salt. Stir and cook for 15-18 minutes. Turn off the heat and drain the cooked pearl couscous.

Squeeze ½ lemon juice into a small bowl; add the olive oil, honey mustard , little sprinkles of black pepper and salt. Whisk and then add the dried mint; whisk again and add the chopped onion then set aside.

Transfer the pearl couscous into a bowl. Add the salad dressing and mix thoroughly. Add the chopped peppers, cucumber, tomato, parsley and green olives then mix thoroughly.

Transfer the salad into a plate; add chickpeas, walnuts and raisins.
