Italian Style Garlic Soup With Crispy Crouton
A simple soup with amazing flavor and fantastic if you have a cold!

Chop the leek, parsley and garlic then set aside.

Rinse the chopped leeks.

Cut the potato into small pieces and then set aside.

Heat up some olive oil in a pot, over medium heat and then add the chopped onions. Cook the onions until they become tender and then add the leeks. Cook the leeks for 2 minuteshen add the garlic & potatoes. Mix thoroughly and then pour in the chicken stock, add the dried thyme, ΒΌ teaspoon of salt and black pepper, stir well and cook for 30 minutes in low medium heat Cut the potatoes to check if they are well cooked and then add the cream.

Pour the whole mixture inside a blender and blend together. It should come out creamy with no lumps and then add the chopped parsley cook for 2 minutes mix together and set aside.

Cut the bread into cubes and then heat up some virgin olive oil in a frying pan, put the bread cubes inside the pan, keep the heat on a medium-low and fry until they become gold brown.

Pour the soup inside a soup cup, add the bread cubes and then garnish with some parsley.
