Homemade Turkish Doner Kebab
A homemade version of the famous Turkish street food, featuring savory, thinly sliced beef seasoned with aromatic spices and roasted to perfection. Wrapped in soft lavash bread with a zesty sumac onion salad and a creamy tahini-yogurt sauce, this dish brings authentic flavors right to your kitchen.

Prepare Meat Base: Process one onion and garlic cloves in a food processor, then squeeze out the liquid using a sieve.

Mix: In a bowl, combine ground beef, onion pulp, 1 tbsp olive oil, 1 tbsp paprika, 1 tsp salt, 1/4 tsp oregano, black pepper, 1 tbsp yogurt, and 1/2 tsp vinegar. Mix until a sticky paste forms.

Shape & Wrap: Place the meat on parchment paper, shape it into a rectangular log, wrap tightly in the parchment, and then wrap again in aluminum foil.

Bake: Bake the log in an oven preheated to 400°F (200°C) for 45 minutes (checking around 20-25 mins) along with whole peppers and tomatoes on the side.

Make Salad: Slice the second onion and mix with chopped parsley, 1 tbsp sumac, 1 tbsp olive oil, 1/2 tsp vinegar, salt, and pepper.

Make Sauce: Whisk 2 tbsp tahini with 3 tbsp hot water until smooth. Stir in 2 tbsp yogurt, 1 tsp vinegar, 1 tsp olive oil, salt, cumin, black pepper, and garlic powder.

Fry Sides: While the meat rests, fry potato wedges in oil until golden and crispy.

Slice Meat: Remove the meat log from the oven, unwrap, and slice it into very thin strips.
