French Custard Raisin Roll

Preheat the oven to 175°C / 350°F.

In a small bowl, mix warm water, yeast, and 1 tablespoon sugar. Cover and set aside for 15 minutes to rise.

In a mixing bowl, combine flour, ½ cup sugar, salt, and butter. Mix for 3 minutes on medium speed.

Add egg and 2 tsp vanilla sugar to the mixing bowl and combine.

Pour the yeast mixture into the mixer and mix on high-speed for at least 9 minutes.

Transfer the dough into a large bowl coated with ¼ tsp oil, and cover for at least 1 hour.

In a mixing bowl, beat eggs, 2 tsp vanilla sugar, cornstarch, and ¼ tsp salt to combine for the custard.

In a saucepan over medium heat, add milk and ½ cup sugar, and mix constantly until heated.

Add the egg mixture to the saucepan on heat, whisk constantly and cook for about 10 minutes. Lower the heat and cook for 4 minutes more or until the custard is formed. Transfer into a small bowl, cover and refrigerate.

Roll out the dough, spread the custard evenly, sprinkle raisins, and roll in. Cut the dough, place on parchment paper in a tray. Cover and allow it to rise for 30 minutes. Brush with egg wash and sprinkle almonds on top. Bake at 175°C for 30 minutes or until golden.
