Fluffy Muffins

Light and airy muffins with juicy blueberries, dusted with powdered sugar and a dollop of jam for a delectable breakfast treat

    Preheat the oven to 175°C.

    Beat the eggs and vanilla sugar together in a bowl.

    Add the powdered sugar, oil, and milk to the bowl, and mix well.

    Add the flour and baking powder to the bowl, and mix until you have a fluffy and creamy batter.

    Line a 12-cup muffin tin with paper liners.

    Fill each liner with batter and add blueberries on top. Cover with more batter and blueberries.

    Bake for 20-25 minutes or until golden brown, placing the tin on the upper rack for the last 5 minutes.

    Let the muffins cool completely at room temperature.

    Sprinkle powdered sugar on top of the muffins and add some jam, if desired.
