Slice the banana and apples, then toss the apple slices in a bowl with lemon juice, 1.5 tbsp sugar, and cinnamon.

Whisk the eggs with vanilla sugar and a pinch of salt for 2 minutes, then add 1/2 cup sugar and mix until pale.
