Greek Orzo Pasta Salad

Greek orzo pasta salad is perfect for those summer picnics and parties or as something to eat on the go.

Ingredients for 6 portions

    Place a pot on the cooker and set the heat to medium. Add 6 cups of water; cover and bring to a boil. Add orzo to the boiling water, stir and then add oil. Cook for 10-15 minutes or until cooked

    Drain the orzo and transfer into a big bowl Add 1 tablespoon of olive oil, mix and set aside.

    Dice the cucumber and set aside. Chop the white onion, red pepper and yellow pepper and set aside. Cut the cherry tomatoes, olives and feta cheese into slices and set aside. Chop the parsley and set aside.

    Stir the orzo and then add the chopped peppers, parsley, onion, the sliced Cherry tomatoes, olives , feta cheese, ½ cup of sliced black olives and corn. Mix thoroughly.

    Pour 2 tablespoons of olive oil into a small bowl. Add the vinegar, oregano, lemon juice, salt, black pepper, sumac and honey mustard.

    Whisk the contents and pour inside the salad. Mix thoroughly to combine.

    Pour inside a plate and then sparkle with feta cheese.
