Vegetarian Zucchini Casserole
This Vegetarian Zucchini Casserole is easy, flavorful, and perfect for a healthy homemade meal. Made with tender zucchini, rich tomato sauce, and simple vegetables, this comforting casserole is ideal for lunch or dinner.

Prepare the Vegetables: Wash all vegetables. Slice the zucchini into rounds, chop the onion and red bell pepper into chunks, and slice the garlic cloves. Separate the green onions, cutting the white parts into short strips and chopping the green tops for later use.

Assemble the Base: In a glass baking dish, combine the zucchini slices, chopped onion, sliced garlic, and red bell pepper.

Make the Sauce: In a measuring cup filled with 450 ml of hot water, dissolve the vegetable bouillon cube. Stir in the tomato sauce, salt, black pepper, paprika, and olive oil until well combined.

Combine: Pour the sauce mixture over the vegetables in the baking dish.

Add Sugar: Sprinkle 1/2 tsp of sugar over the top of the mixture and stir the vegetables gently to distribute the sauce and ingredients.

Cover: Crumple a piece of parchment paper, wet it, and place it directly over the vegetables. Seal the dish tightly with a layer of aluminum foil over the parchment.

Bake: Place the dish in an oven preheated to 350°F (approx. 175°C) and bake for 35 minutes.

Final Roast: Remove the dish from the oven and discard the foil and parchment paper. Return the uncovered dish to the oven and cook for an additional 10 minutes.
