Satisfying Fried Fish With Rice & Tahina

    Dice the onion and set it aside in a small container. Rinse the rice and soak it in 3 cups of water for 20 minutes. Drain.

    Heat 2 tablespoons of oil in a pot over medium heat. Add diced onion and caramelize until browned. Add water and bring to a boil. Stir in washed and drained rice, add salt, and cook until rice absorbs water. Reduce heat to low, cover, and cook for 20 minutes.

    Mince the garlic cloves and set them aside in a small container.

    Cut fish fillets into 3 pieces each.

    On a plate, combine 1 teaspoon of salt, 1 teaspoon of cumin, and 1 tablespoon of minced garlic. Spread this mixture over fish fillets. Cover and marinate for 30 minutes.

    Dip fish fillets in whole wheat flour.

    Heat ½ cup of oil in a pan over medium heat. Fry coated cold fillets until golden. In a small container, mix 3 tablespoons of tahina with ⅓ cup of warm water. Add ¼ cup of vinegar and mix. Stir in 1 tablespoon of minced garlic, ½ teaspoon of salt, and 1 teaspoon of cumin. Mix well and drizzle with olive oil.
