Irresistible Chow Mein Noodles

    Cut the baby bok choy, wash before and after cutting. Cut the yellow beans, chop the red pepper, and onion. Slice the chicken breast.

    In a large pan over low heat, add 1 tablespoon of oil. Fry the noodles until golden. Transfer to a small container.

    Using the same pan on low heat, add 2 tablespoons of oil. Cook Thai red curry paste for 2 minutes. Stir in soy sauce, coconut milk, and yellow beans. Cover and cook for 10 minutes.

    Add baby bok choy and cook for 5 minutes. Mix in 1/2 teaspoon of black pepper, 1/2 teaspoon of salt, and chopped red pepper. Cover and cook for 5 more minutes. Keep heat low and cook for 5 minutes. Set aside.

    In a pan over medium heat, add 1 tablespoon of oil. Fry chicken breast until golden on both sides. Transfer to a plate. Add sliced onion to the pan, mix in 1 teaspoon of salt. Add fried chicken and 1/4 teaspoon of black pepper. Cover and cook for 5 minutes. Turn off heat.

    In a pot over high-medium heat, add 6 cups of water. Stir in 1 teaspoon of oil and 1 teaspoon of salt. Bring to a boil. Add 300 grams of noodles and cook for 7-10 minutes.

    Place the pan with bok choy mixture and chicken mixture on medium heat. Add cooked noodles and mix well.
