Homemade Chicken Shawarma

Peel the mandarin by hand, put it in a blender, add 2 garlic cloves, and blend. Mix in paprika, onion powder, black pepper, 30ml lemon juice, 80ml olive oil, yogurt, ½ teaspoon salt, and cumin; blend until smooth.

Place chicken thighs in a bowl, add water and vinegar. Set aside for 30 minutes, then wash.

Cut chicken thighs into small pieces, transfer to another bowl, and add the mandarin mixture. Mix well. Cover and refrigerate for 2-3 hours.

In a cooking pot, pour 1 cup of water and set it on medium heat. Add ½ cup of corn starch and stir until thickened. Soften the mixture with 1 more cup of water and continue stirring. Reduce heat and cook for 5 minutes.

In the blender, add ½ cup of water, 1 teaspoon salt, 4 garlic cloves, and 30ml lemon juice. Blend until smooth. Add the corn starch mixture and blend again. Transfer to a jug, gradually add 50ml olive oil while stirring. Transfer to a small bowl.

Heat a pan on medium-high heat. Add 1 tablespoon of butter and the chicken mixture. Cook until the liquid is absorbed. Transfer to a bowl and garnish with parsley.
