Hearty Beef And Veggies Tortilla Wraps

Savory and aromatic beef and veggie filling wrapped in warm tortillas, topped with zesty radish salad for a satisfying meal.

    Chop parsley, coriander, onion and slice peppers. Chop garlic.

    Cook onion and garlic in a pan with oil. Add ground beef and cook for 5 minutes. Add peppers and cook for 5 minutes. Add diced tomatoes and seasonings, mix well and cook for 5 minutes.

    Add chopped parsley and canned corn to the beef mixture and mix.

    Scoop beef mixture into tortilla, add mozzarella cheese and roll.

    Place rolled tortillas in a rectangular container.

    Spread diced tomatoes and mozzarella cheese over the tortillas.

    Bake in the oven at 350°C for 25-30 minutes.

    Make the radish salad by mixing chopped radish, mini cucumbers, green onions, coriander, salt, black pepper, and lemon juice, and garnish the tortillas with the salad and slices of lemon.
