Fast Ground Beef, Potato & Veggie Skillet
This is a hearty, one-pan meal that comes together quickly. It features ground beef and potatoes simmered in a flavorful curry and tomato broth, packed with green beans and peas for a complete, nutritious dinner.

Mince the garlic, peel and cut the potatoes into cubes, and chop the onion.

Heat the olive oil in a skillet, add the chopped onion, and cook until light golden.

Add the ground beef and cook until browned, breaking it up with a spoon.

Season with salt, black pepper, and the minced garlic.

Stir in the butter (if using) and cook for 3 minutes.

Add the potatoes, curry paste, tomato sauce, and Indian spice mix to the pan.
