Cheesy Broccoli Casserole

Get your veggies and protein fix with this hearty broccoli bake, loaded with vibrant peppers and a cheesy, herbaceous egg batter.

    Chop and wash the broccoli.

    In a pot, add 5 cups of water and 2 tablespoons of milk. Bring the water to a boil and add the broccoli with 1/4 teaspoon of cumin. Boil and set aside to cool.

    Chop the yellow and red peppers, onion, and dill.

    In a pan, heat 2 tablespoons of olive oil on low heat. Add the chopped onion, fry until light golden, then add the chopped peppers, 1/4 teaspoon of black pepper, and mix. Turn off the heat.

    Spread some olive oil in a rectangular container. Pack in the cooked broccoli and the cooked vegetables.

    In a bowl, whisk the eggs, 3 tablespoons of olive oil, 1/4 cup of milk, salt, 1/4 teaspoon of cumin, 1/4 teaspoon of black pepper, flour, baking powder, and dill. Pour the mixture into the broccoli container and add the shredded cheese.

    Bake for 30-35 minutes at 180°C.
