Baked Potato Gratin Dauphinoise
Decadent and indulgent with thinly sliced potatoes layered with a velvety cheese sauce and baked until bubbly and crispy on top.

Preheat oven to 175°C. Peel and slice the potatoes using a slicing machine. Wash and put them aside in water until needed.

Heat a pan over medium heat. Add the butter and oil and stir. Add the minced garlic cloves and fry until light golden. Gradually add 1 tablespoon of flour while stirring. Add 1 teaspoon of flour, stir and cook for 1 minute. Gradually add 1 cup of milk while stirring and cook for 2 minutes. Gradually add 1/4 cup of milk while stirring. Add 1/4 teaspoon of salt and black pepper and cook for 2 minutes. Gradually add 1 cup of marble cheddar cheese while stirring. Turn off the heat.

Drain the sliced potatoes.

Scoop 1 teaspoon of butter into a square container and spread it. Add a layer of sliced potatoes and spread the sauce over each layer until you finish all the sliced potatoes. Spread 1 cup of marble cheddar cheese over the top layer and add 1 teaspoon of green onion.

Cover the container with a baking sheet and foil and place in the middle rack of the oven. Bake for 30 minutes at 175°C.

Remove the baking sheet and foil and place the container in the upper rack. Bake for an additional 10 minutes or until golden brown.
