Prepare the eggplant: Remove the stem and base, half peel, and cut it in half. Scoop out the center.

Prepare the onions: Peel and scoop out the centers of 3 onions. Mince 2 onions and set aside.

Make the stuffing: In a bowl, combine ground beef, diced onion, bread crumbs, parsley, garlic powder, black pepper, oregano, salt, and the beaten egg. Mix well.

Heat a pan over medium heat, add 1/3 cup of oil, and fry the eggplant until slightly golden. Set aside.

Brush 1/2 teaspoon of oil inside a rectangular container.

Arrange the eggplant and scooped onions in the container. Brush 1 teaspoon of oil over the contents. Stuff with the prepared beef mixture and minced onions. Garnish with tomatoes and cheese.

Place the container in the middle rack of the oven and bake for 15 minutes at 175°C. Cover with aluminum foil and bake for an additional 15 minutes. Uncover and bake for a final 15 minutes.
