Fluffy Tunisian Doughnuts
A decadent treat, these Tunisian doughnuts are soaked in syrup, rolled in roasted nuts, and fried to perfection.

Combine all the syrup ingredients in a saucepan on mediumlow heat and bring to a boil, then let it boil for 10 minutes. Test the consistency, turn off the heat and set aside to cool.

Blend the nut ingredients one at a time, place them in a shallow bowl and set aside.

In a mixing bowl whisk eggs, vanilla, powdered sugar, oil, and milk.

Sift 2 cups of flour and baking powder into the egg mix, fold the rest of the flour into the dough and cover for 1 hour.

On a floured surface, roll the dough to 5mm thick then use a cup to cut out the dough to create a circle, and make a small hole in the middle with a small pastry cutter to make a doughnut shape.

In a saucepan, pour in the oil for deep frying and heat to medium heat carefully place the doughnuts into the oil one after the other and fry both sides until golden, then drain.

Dip the doughnuts in the syrup three times and drain, then roll gently in the nuts to coat.
