In a skillet over medium heat, boil the apricot paste and 3 cups of water for 10 minutes.

In a separate bowl, combine the remaining ½ cup of water and cornstarch.

Add the cornstarch mixture and sugar to the boiling water, stirring continuously for 3 minutes.

Mash the apricots as they soften until you have a thick, pulpy pudding.

Pour the pudding into serving glasses and set aside to cool.
